“Feast” was definitely the word of the day on Easter Sunday. My contribution to the Easter eats came off my Spring 2012 TTD list: the Easter Bunny Butt Cake. This festive cake was pinned from the Betty Crocker website. But, since Betty Crocker cakes are the frozen pizzas of the baking world, I replaced it with my sister-in-law’s Choco-mayo Cake recipe.

Ingredients:

  • 2 cups flour
  • 2/3 cup cocoa
  • 1 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1 2/3 cup sugar
  • 4 eggs
  • 1 tsp vanilla
  • 1 cup mayonaise (not light)
  • 1 1/3 cup water
How to:

Mix dry ingredients in one bowl. Mix sugar, eggs and mayo in another. Alternate dry ingredients with wet ingredients and water, while beating. Place batter into 3 muffin cups and bake for 10 minutes at 350 degrees. Pour remaining batter into 1 1/2-quart bowl and bake for 30-35 minutes at 350 degrees. Allow cake to cool. Follow steps 4-6 of Betty’s instructions to turn the cake into a bunny’s butt.

Now for a few more words that sum up the holiday: excitement, discovery, wonder, more excitement, and finally, fatigue.
